Caesar Salad with Chicken and Crispy Croutons

A fresh and satisfying Caesar salad with juicy grilled chicken, crunchy sourdough croutons, and a bold, creamy dressing – a timeless classic made for outdoor cooking

Serves 2 people

Ingredients

  • 2 romaine hearts
  • 2 slices sourdough bread
  • 2 chicken breasts

Dressing

  • 70 g quality mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, pressed
  • 15 g finely grated Parmesan (plus extra Parmesan for topping)
  • 2 anchovy fillets

Method

• Start by preheating your combo plancha-grill.
• Rinse the lettuce and tear it into smaller pieces.
• Tear the bread into chunks for rustic croutons.
• Mix the mayonnaise with lemon juice, mustard, Worcestershire sauce, pressed garlic, and grated Parmesan.
• Finely chop the anchovies and stir them into the dressing.
• Halve the chicken breasts lengthwise and grill them.
• Add oil to the plancha and fry the croutons until crispy.
• Toss the lettuce with the dressing.
• Slice the grilled chicken and place it on top of the salad. Finish with croutons and shaved Parmesan.
