Baked Beans with Fried Eggs and Grilled Tomatoes

A hearty and flavorful dish of spiced baked beans topped with fried eggs and served with grilled tomatoes – perfect for a cozy outdoor brunch.

Serves 4 people
  • 1 onion
  • 1 clove garlic
  • 1 can cannellini beans
  • 1 can chopped tomatoes
  • 25 ml brown sugar
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • Sea salt
  • Freshly ground pepper
  • Oil for frying
  • 4 eggs
  • 4 tomatoes

This is the way To make it...

Method

• Start by preheating your combo plancha-grill.
• Finely chop the onion and garlic and set aside in a bowl.
• In a mixing bowl, combine the drained beans, chopped tomatoes, brown sugar, tomato paste, soy sauce, and cumin.
• Heat oil on the plancha.
• Sauté the onion and garlic until golden.
• Add the bean mixture and stir well. Let it cook for a few minutes.
• Halve the tomatoes and place them cut-side down on the grill side of your combo.
• Crack the eggs directly into the bean mixture.
• When the eggs are cooked and the beans have simmered, season with salt and pepper and serve.
