300 grams of minced beef, at least 12% fat
1/2 onion, sliced into rings
2-4 slices of good cheddar cheese
4-6 slices of bacon
2 tablespoons of burger dressing
2 tablespoons of Hellmann’s mayo
2 Potato Buttermilk burger buns or Brioche buns
If you enjoy a juicy burger, you’ll also like this variation.
Start by making your own homemade burger dressing, or use a store-bought one. Weigh the meat into patties of 150 grams each or 4 patties of 75 grams each and shape them into meat balls.
Turn on your plancha grill to maximum heat, and when it’s hot, place the onions in piles on one of the planchas, corresponding to the number of meatballs you’ve prepared. Add some oil.
Place bacon on the other plancha and reduce the heat to medium. Place the meatballs on top of the onions and flatten them with a Cozze Burger Press.
Flip them after about 1 minute and add Cheddar cheese to the patties. Flip the bacon and place the burger buns, cut side down, on the same plancha as the bacon to toast them in bacon fat.
Remove the patties when they’re done, and let them rest on a cutting board while you prepare to assemble your burger. When the burger buns and bacon are ready, remove them and place them on a cutting board.
